PRODUCTION 200,000 bottles produced.  THE BLEND 50% Cabernet Sauvignon and 50% Merlot.  VINIFICATION  Harvest: mechanical (70%) and handpicked (30%).   3 week maceration.  Fermentation controlled at 30°C.  MATURING OF THE WINE 12 months in oak barrels  (1/3 being new).  AGEING POTENTIAL This wine can be enjoyed as of today, but can also be aged for 10 years.  REVIEWS  2006: 89/100  Wine Enthusiast (2010)  2005: 88/100  Wine Enthusiast (2009)  2005:   Guide Hachette des Vins (2009)  2003: Silver Medal  Decanter Magazine (2007)  TASTING NOTES Beautiful ruby color. A complex nose of red fruits and woody aromas with vanilla and roasted notes. The palate is round and well balanced with great aromatic of fruity and roasted notes, offering a finale of melted tannins. Great aromatic persistence. THE  ESTATE   HISTORY In the 19th century, Château Haut Selve was the biggest property in Bordeaux with 350 hectares. After having been destroyed by phylloxera and abandoned, it became the unique creation of the 20th century (1993) in the Bordeaux Region. Within 15 years the estate has become a reference for quality in the Graves area.  GEOGRAPHICAL LOCALISATION Château Haut Selve is located at SaintSelve, about 27 km SouthEast of Bordeaux.  TERROIR Three types of soils:    Deep stony soil   Limestone stony soil   Clay stony soil.  THE VINEYARD  Total surface of the vineyard: 43 hectares    Surface AOC Graves red: 32 hectares    Surface AOC Graves white: 11 hectares  Average age of the vines:  15 years.  Sustainable agriculture:   Double guyot.  Density: 5500 vine / hectare.  Foliar surface superior to 13 000 m².  Organic fertilizing and cultivating of the soils.  Sustainable protection of the vineyard.
